动物肌内脂肪分布于肌外膜、肌束膜以及肌内膜等部位,是决定肉质的主要因素,其与嫩度、多汁性和风味密切相关。肌内前体脂肪细胞是一种能够增殖、定向分化的特异性的前体细胞,其体外培养有利于完整地认识肌内脂肪组织形成的全过程及其调控机制,是离体研究脂肪生成及其代谢的基础。科研人员对肌内前体脂肪细胞的原代培养方法和技术做了大量探索。本文就近年来建立的各种肌内前体脂肪细胞原代培养方法及其优缺点、鉴定方法及应用进行了综述。
Abstract:Animal intramuscular fat is distributed in the epimysium, perimysium and endomysium, which is the main factor that determine the meat quality, and is closely related to the tenderness, juiciness and flavor of meat. Intramuscular preadipocyte is a kind of specialized precursor cell which has the ability of proliferation and directed differentiation. The culture of intramuscular preadipocytes in vitro is conducive to completely understand the whole process of intramuscular fat deposition and its regulatory mechanism, and is the basis for the study of adipogenesis and its metabolic. Researchers have done a lot of exploration on the primary culture methods and techniques of intramuscular preadipocytes. This article mainly summarized the primary culture methods, their advantages and disadvantages, the identification methods and application of intramuscular preadipocytes established in recent years.
